El Puente Honey is produced at the El Puente Mill, established in 2018 in the Palestina region of southern Huila, Colombia. Named after a footbridge nearby, the mill serves over one hundred local families who deliver their coffee for processing. This project aims to improve the prospects of coffee producers by providing a facility capable of handling larger volumes of coffee than individual farms can process. El Puente offers premium prices to farmers who deliver wet coffee, motivating them to cultivate high-quality beans. The operations are overseen by Elkin Guzman.

At El Puente Mill, coffees are processed as either Honey or Natural. In this instance, the coffee underwent the Honey process. After harvesting, cherries are fermented in sacks for 24 hours before being subjected to a floating process to remove impurities. Following this, they undergo another 24 to 36 hours of fermentation. Next, the coffee is de-pulped and sun-dried for 25 to 27 days, resulting in a sweeter final cup due to the remaining mucilage on the beans.
